Or–more likely– I’ve failed them. This book has made me a firm believer in using a scale for baking projects. The simple line illustrations are excellent, some of the best I’ve seen. RLB’s recipes tend to go on for pages because of her exhaustive attention to every detail and inclusion of multiple methods within each recipe hand, machine, etc.
The back section of the book has extensive descriptions of ingredients. Of all the recipes in here, the crumpets are the standout – every person I’ve served them to says they bring to mind what crumpets should taste like if they had come from a five star restaurant, and they’re dead easy to make.
One thing that mattered to me this holiday season was making for the first time a Pannetonemy favorite holiday bread. I swear on it. It just isn’t what I was hoping it would be. She just isn’t in the least way elitist. Hard to explain, but I think it has to do with both her approach and her writing style. I checked this book out from the library because I just learned to bake a couple types of bread, and I wanted to be a bread expert. I enjoy lrvy, and I intend to keep enjoying it. There are percentages at the end of each recipe for easier scaling.
